Much better than the clunky, slow, factory options that have unintuitive menus that are currently available.  

Although the installation of a tablet into a vehicle is not new, I believe people have been using various tablets for a while now, I really think the first manufacturer to offer a 'docking' system for tablets in place of a factory sat-nav option would be market-leading.

Sure, you would have to work out a way to dock various tablets, but surely it is viable!

Plus, the consumer should save X amount by using their own hardware instead of the factory option.

Our Next Generation Infotainment is all about this sort of thing, bringing in your own media and sharing across the Vehicle.

The problem with supplying consumer electronics with the vehicles, aside for not being designed or built to Automotive standards is they start designing 5 ish years in advance.  As you know consumer electronics move along a lot in 5 years.

Driving ANY vehicle should be about driving the vehicle, not trying to focus on some other task because it looks cool, until such time that we all have fully autonomous vehicles

Indeed, we blocked TV/Video from the driver when the vehicle is moving.
Passenger can still watch on the duel view screen though or in the rear.

I would only really be interested in using it for Navigation.

Then when you are stationary, you can use it to find places to eat or attractions nearby. Picking up your emails and browsing the net WHILST STATIONARY would just be a bonus.

I was approaching it from the perspective of having a choice between a factory install or a dock-able tablet, I would choose the tablet, much more user-friendly and a wider range of functions.

Yeah my bro's Audi A6 uses a Google Maps based nav system, I believe it does all that.

TBH my mobile does all that and doesn't require a permanent dock

Yep, same here, but I would like to use navigation on a screen bigger than 4/5". That Nexus 7 is 7", but I guess you could go for the 10" if you liked... OOO ERRR, where's Art

a decent HUD system is the way to go imo
