Can't argue about those two.
The Bandit TA is what got me into American cars in the first place. I'd add:
1978 Cobra II with window slats, 70's graphics and everything.

That's the main three realistic ones and even those are not likely to happen any time soon due to lack of space and money.

Keeping the cars to under 20k each:

Sierra Cosworth RS500 - Black
MK1 Escort RS Turbo - White
1964 Mustang 289 Convertible - Red
Corvette ZR1 - Black
Dodge Viper - Original version - Red

I'd estimate that's about 80k total.

Least American garage on here, no supprise there then.

Realistic garage
RX7 RS Turbo 2 (13B) manual 6 speed
Holden HSV GTS Coupe 4 Monaro supercharger (the one they never released over here)
Noble M12 GTO 3R (not M400)
Autobacs Garaiya RS-01 (bet none of you have ever heard of one of these)
Mitsubishi EVO 5 GSR Zero Fighter

Non realistic garage
Ultima GTR640
Porsche Dauer 962
AMG SLK GTR
Porsche 935 Turbo
JUN R33 Skyline (the 1000BHP one)

Shame we are limited to 5, I could spend all day listing the cars I would like to have. As could we all I suspect.
